I love trying new salads and this spicy tomato salad is perfect when you want to add lots of flavor to your lunch or dinner. I use this as a side dish and enjoy it with steamed vegetables, mashed potatoes, beans, and anything else I’m eating. With only a few ingredients and no cook time, this recipe is simple, delicious, and requires virtually no time to put together!
Serves: 2 large servings
Vegan, Gluten Free, Soy Free
Ingredients:
2 large tomatoes
1/2 a red onion or a handful of chopped scallions
Juice from less than 1/2 a small lime
Small piece of jalapeno finely chopped (start with a tiny amount and add more if you want more heat)
Salt and pepper to taste
Instructions:
Chop the tomatoes into small pieces and dice the onion or scallions into small pieces as well. Add lime and jalapeno and stir. Add salt and pepper to taste. Enjoy!
Tip: You can treat this salad as a fresh salsa and enjoy it with tortilla chips. You can also add chunks of avocado if you have them on hand!
