Potatoes are a great side dish, especially since they are often seen as a comfort food, but actually contain vitamins C and B-6, as well as fiber, potassium, manganese, and other minerals that are necessary for a healthy diet. I came up with an easy way to make delicious, vegan mashed potatoes that is incredibly yummy and satisfying – a perfect addition to a veggie-filled plate.
Serves: 4
Vegan, Gluten Free, Soy Free
Ingredients:
8 large, organic red potatoes
4 garlic cloves
Water
Low sodium vegetable broth (use to achieve desired consistency)
Salt and pepper to taste
Instructions:
Wash the potatoes and cut them into medium sized pieces. Place the potatoes in a pot and add enough water to cover all of the potatoes. Heat on high until the water boils, then turn down the heat and cover the pot. Wait 25-30 minutes and check to see if the potatoes are cooked (use a fork – if they’re soft they’re done!).
Drain the water (I like leaving a bit of water so the potatoes are easier to mash). Mash the potatoes and garlic cloves and add vegetable broth. Season with salt and pepper and serve with vegetables and salad – yum!
