Vegan Sweet Potatoes and Cherry Tomatoes

My family, friends, and I love sweet potatoes, so I feel I should share this easy to make recipe. If you’ve got things to do while you prepare dinner, this is the perfect recipe for you – all you have to do is chop the potatoes and put them in the oven – you’ll have plenty of time to take care of other things while the vegetables cook in the oven.

Serves: 4

Vegan, Gluten Free, Soy Free

Ingredients:

6 large organic sweet potatoes

2 Handfuls organic cherry tomatoes

Dash of coconut oil or grapeseed oil (optional)

Instructions:

Preheat oven to 450 degrees. Wash, peel, and chop the potatoes into medium sized pieces. Wash the cherry tomatoes. If you are using oil, toss the vegetables and oil together in a baking dish. Cover the baking dish with foil and cook for about an hour (varies depending on your oven). Check on the potatoes after 45 minutes to make sure they still need to cook. They will be soft when they are ready. Enjoy!
