Easy Vegan Burrito Bowl


Delicious Burrito Bowl

This burrito bowl is delicious and so easy to make! I often have it for lunch or dinner and not only is it yummy, healthy, and affordable, it’s also so filling! I recommend having it after a workout or when you’re really hungry. The avocado provides healthy fats, while the beans will give you protein and lots of energy. The vegetables and beans will give you fiber, vitamins, and minerals and the salsa is full of spices that are great for your health. Enjoy!


Vegan, Soy-Free, Gluten-Free, Nut-Free

1 can black or kidney beans (you may also cook dry beans ahead of time and use those)

1 cup organic kale

Fresh guacamole

Fresh salsa (see recipe)


Salt and pepper for the beans

Cumin for the beans (optional)

Brown rice


Warm up the beans on the stove and season with salt, pepper, and cumin. I don’t add any oil to this recipe, so the only fat you are getting is from the avocado. Add a bit of water to the pan so that the beans don’t stick. Heat the brown rice and place in a plate. Top with beans, guacamole, fresh salsa, greens, and enjoy!
