This chickpea salad has become a go-to recipe in my house. It’s easy to make and it packs in a lot of flavors in every bite – I love it!
Ingredients:
Vegan, Gluten Free, Soy Free
1 15 oz. can organic chickpeas (also called garbanzo beans)
Handful organic cherry tomatoes cut in half
Handful green onion, chopped
1 large dill pickle cut into small pieces
Swirl of mustard
Small squeeze of fresh lime juice
Salt and pepper to taste
Handful chopped celery
Handful chopped carrots
Dash of cumin (optional)
Instructions;
Rinse and drain the chickpeas; place in a large bowl and soak them for as long as you can before you prepare this recipe. After you have let the chickpeas soak, rinse and drain them one last time. Mash the chickpeas together. Swirl some mustard on top of the mix. Add pickles, green onion, tomatoes, celery, and carrots. Mix everything together and add lime, salt, pepper, and cumin to taste. I like to wash some romaine lettuce and fill it up with this salad – it’s so delicious! I would recommend doing so if you want something light, but filling. If you want something heavier, you can make a sandwich with this salad; you can also add some vegan cheese and make a chickpea melt! Lastly, you can make wraps with this salad using tortilla wraps – and you can use gluten-free tortillas or fresh chard, too!
